Chicken and Vegetable Panzanella

Chicken and Vegetable Panzanella

Ingredients


  • 4 (1"/2.5 cm) slices Italian or sourdough bread
  • 4 tbsp. unsalted butter
  • 1 garlic clove, peeled
  • 2 (4-oz./115 g) boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 green bell pepper, seeded and chopped
  • 1 red bell pepper, seeded and chopped
  • 1 yellow onion, roughly chopped
  • 1 large tomato, chopped
  • 2 cups chopped Romaine or mixed greens
  • 1 bunch Italian flat-leaf parsley, roughly chopped
  • Shaved Parmesan cheese
  • ½ cup favorite Italian dressing
  • Directions


  • Butter each side of the bread. Place bread in the base of the MicroPro™ Grill. Place cover on the bread in the grill position. Microwave on high power 2 minutes.
  • Remove, flip bread and microwave on high power 1 minute.
  • Remove and rub bread with whole garlic clove, set aside.
  • Place chicken in base of the MicroPro™ Grill. Place cover on the chicken in the grill position. Microwave on high power 6 minutes.
  • Remove, flip chicken and microwave on high power 3 minutes or until internal temperature of chicken reaches 165° F/75° C.
  • Remove chicken, sprinkle with salt and pepper to taste, set aside 2 minutes. Cut chicken into ½"/1.25 cm cubes.
  • Place peppers, onion and tomato in base of the MicroPro™ Grill. Place cover on the vegetables in the grill position. Microwave on high power 8 minutes.
  • In a large bowl, combine Romaine, parsley, bread cubes, grilled vegetables and dressing. Garnish with shaved Parmesan. Serve at room temperature.

    Lemony Ranch Chicken and Potatoes

    Ingredients


  • 8 new red or white potatoes, cut into ½”/1.27 cm pieces
  • 1 lemon, zested and cut into quarters
  • 1 tbsp. corn starch
  • ¼ cup chicken broth
  • 3 tbsp. DIY Ranch Seasoning Blend*(https://stmp.co/2HsAodO)
  • 2 tsp. kosher salt
  • 4 (4-oz./115 g) skinless, boneless chicken breasts
  • 4 green onions, sliced thin
  • Directions


  • In the base of the Microwave Pressure Cooker, combine potatoes and zest. Squeeze lemon pieces over potatoes and add to Pressure Cooker. In a small bowl, stir together corn starch and chicken stock, pour over potatoes and lemons.
  • Sprinkle salt on both sides of each chicken breast. Dredge chicken in ranch seasoning blend. Place chicken on top of potatoes. Cover and seal Pressure Cooker. Microwave on high power 18 minutes.
  • Remove pressure cooker from microwave and let stand 10 minutes or until pressure indicator fully lowers. Remove cover and transfer chicken to a plate or platter.
  • Stir green onion into potato mixture and serve with chicken.

    Pulled Apple Cider Chicken

    Ingredients


  • 1 lb./455 g chicken breast
  • 1 tsp. coarse kosher salt
  • 1 green apple, cored and quartered
  • ½ onion, peeled and halved
  • 2 cups apple cider or juice
  • Directions


  • Season chicken with salt and place in base of Microwave Pressure Cooker.
  • Place apple and onion in base of Power Chef fitted with blade attachment. Cover and pull cord until finely chopped. Add to base of Microwave Pressure Cooker.
  • Add cider to Microwave Pressure Cooker to cover ingredients.
  • Seal and microwave on high for 15 minutes. Allow pressure to release naturally before opening.
  • Shred chicken and serve warm.
