Key Lime Cookies

Ingredients


  • ½ cup unsalted butter, cubed
  • 1 large egg
  • 2 key limes
  • 1 – 17.5 oz. pouch sugar cookie mix

Directions


  • Preheat oven to 375°F
  • Fill Mix N Stor® Pitcher with hot water, place cover on top, remove middle insert.
  • Place cubed butter in All-in-One Shaker and seal. Insert shaker in mix n store with water to softened butter.
  • When butter has softened, discard hot water and transfer butter to base of Mix N Stor® Pitcher.
  • Using All-in-One Mate juice and zest the limes. Transfer zest and juice to mix n store.
  • Using the egg separator, separate the yolk from the white. Add the white to mix n store.
  • Mix all contents of batter until well combined.
  • Scoop tbsp. of dough onto baking sheet lined with Silicone Wonder Mat and bake for 9-10 mins or until golden brown.

Cinnamon-Vanilla Gingerbread Cookies

Cinnamon-Vanilla Gingerbread Cookies

Ingredients

  • 5 cups all-purpose flour (5 to 5-1/2 cups)
  • 1 Tbsp. Chef Series ~
  • Cinnamon Vanilla Spice Blend
  • 1 tsp. nutmeg
  • 1¼ cup molasses (unsulphured)
  • 1 cup shortening
  • 1 cup sugar
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. ginger
  • 2 eggs (beaten)

Directions

  1. Preheat oven to 375 degrees F. Stir together flour, soda, salt and spices; set aside.
  2. Melt shortening in Chef Series 2½-Qt. saucepan. Cool slightly. Stir in sugar, molasses, and eggs with Saucy Silicone Spatula; mix well. Add four cups reserved flour mixture; mix well with spatula.
  3. Turn mixture onto floured Simply Perfect Pastry Sheet. Knead in remaining dry ingredients by hand. Add a little more flour, if necessary, to make firm dough.
  4. Roll out on lightly floured Pastry Sheet to ¼-inch thickness for cut out cookies.
  5. Bake on Silicone Wonder Mat lined cookie sheet; for medium-sized cookies 6-10 minutes.

Ingredients

  • ½ stick unsalted butter, in chunks
  • ¼ cup corn syrup
  • ½ cup light brown sugar (packed)
  • ½ tsp. Cinnamon-Vanilla Spice Blend
  • ½ cup all-purpose flour


Directions

  1. In Base of  Microwave Cooker, place butter chunks, corn syrup and brown sugar; stir together.
  2. Cover and microwave for 1 minute on 60% power; stir, replace cover and microwave for an additional ½ minutes at 60% power.
  3. Slowly stir in flour, mixing until well blended.
  4. Using a teaspoon, drop batter onto a cookies sheet lined with Silicone Wonder Mat.
  5. Place only 6 cookies per sheet allowing for batter to spread while baking.
  6. Bake at 350 degrees F. for 6-8 minutes until golden and bubbly.
  7. Remove from oven and allow to cool approximately 2 minutes.
  8. Gently pull off mat and place on platter or create a shape (perfect for piping with a filing). If cookies will not pull off without breaking, place back in oven for 30 seconds to make them pliable again.
  9. *** Filling suggestions: Pipe with whipped topping, icing or mousse.***

Pudding No-Bake Oatmeal Cookies

Ingredients

  • 2 cups white sugar
  • ¾ cup butter
  • ½ (12 ounce) can evaporated milk
  • 1 (3.4 ounce) package instant
  • butterscotch pudding mix or chocolate fudge pudding mix
  • 3½ cups quick-cooking oats

Directions

  1. In the Stackcooker 3 quart casserole, combine the sugar, butter and evaporated milk.
  2. Cook on high power for 5 minutes, stirring occasionally until the mixture comes to a rapid boil.
  3. Allow the mixture to boil undisturbed for 20 to 30 seconds.
  4. Remove from microwave and stir in the instant pudding and oatmeal.
  5. Spoon onto silicon wonder mat or waxed paper lined cookie sheets.
  6. Allow to sit at least 15 minutes or until firm.
